A SIMPLE SALAD WITH A SIMPLE VINAIGRETTE

Lettuce

SEND ME POTS

Ingredients
(as part of a spread for 3-4 people)

10-12 homegrown lettuce leaves 
Half a garlic clove
3/4 of a tsp of Dijon mustard 
8 tbsp of extra-virgin olive oil 
A good pinch of sugar

Step 1

Separate the leaves and was them. Dry gently - if the leaves are wet, the dressing won't cling to them. Tear the bigger leaves and keep the small ones as they are. 

Step 2

Put the garlic in a small bowl and add the Dijon mustard (use about 3/4 of a tsp at first - you can add more later if you need to), vinegar and some salt, pepper and sugar. 

Step 3

Whisk with a fork and gradually add the olive oil. The mixture will emulsify, becoming thicker. Taste the dressing before you have added all the oil, as you might not need the whole lot. Put the leaves in a serving bowl and add as much dressing as you need for a light coating. Toss and serve.
