Pan Con Tomate

Do it like the Spanish do.


From the Pot 



(feeds 4) 

2 large ripe tomatoes, grated
1 loaf of sourdough, sliced
2 cloves of garlic
2 big pinches of salt
100ml olive oil

Step 1

Add the grated tomatoes and a glug of olive oil, then season to taste and mix together.

Step 2

Thinly slice the sourdough. Place a pan over a medium heat and pour in a large glug of oil. Add two slices of bread and fry until golden brown and crisp. Flip and repeat on the other side.

Step 3

Peel the garlic and rub the raw garlic onto the fried sourdough. 

Step 4

Spread a generous amount of the tomatoes onto the sourdough and drizzle with olive oil. This will take you back to the bustling streets of Madrid!
