Basil Pesto

Shop bought pesto will NEVER compete with the homemade stuff. And using your own basil... I would happily bathe in this.

From the Pot 




(feeds 4) 

1 clove of garlic
1 large bunch of fresh basil 
50g pine nuts
3tbsp extra virgin olive oil
50g Parmesan, grated 

Step 1

Peel the garlic and grind in a pestle and mortar with salt. 

Step 2

Add the basil and pine nuts and grind to a paste. 

Step 3

Add olive oil and grated parmesan and continue grinding until smooth (you can use a blender if you prefer). 

Step 4

Season to taste. Serve with fresh pasta and top with more parmesan. Seriously simple and seriously seriously good!
